Glorified Rice Salad

Ingredients
  

  • 2 cup Cooked Rice Med. Grain
  • 1-1/4 cup Cold Water
  • 1 cup Sugar
  • 2 tbsp Cornstarch
  • 2 Eggs Beaten
  • 5 tbsp Real Lemon Juice
  • 1/2 tsp Vanilla
  • 1-2 tbsp Butter
  • Mini Marshmallows
  • Crushed Pineapple Drained
  • 2 cup Whipped Cream

Instructions
 

  • Cook water, sugar, cornstarch, eggs, lemon juice and vanilla until thick.
  • Watch so it doesn't scorch.
  • Remove from stove to cool.
  • Add butter.
  • When cool, add cool rice, marshmallows, pineapples and whipped cream.
  • Mix, chill and serve.
