Glorified Rice Salad

Ingredients
- 2 cup Cooked Rice Med. Grain
- 1-1/4 cup Cold Water
- 1 cup Sugar
- 2 tbsp Cornstarch
- 2 Eggs Beaten
- 5 tbsp Real Lemon Juice
- 1/2 tsp Vanilla
- 1-2 tbsp Butter
- Mini Marshmallows
- Crushed Pineapple Drained
- 2 cup Whipped Cream
Instructions
- Cook water, sugar, cornstarch, eggs, lemon juice and vanilla until thick.
- Watch so it doesn't scorch.
- Remove from stove to cool.
- Add butter.
- When cool, add cool rice, marshmallows, pineapples and whipped cream.
- Mix, chill and serve.
