02 Feb: Quick No-Roll Pie Crust

Sift dry ingredients into a 9-inch pie pan. Combine oil and milk in measuring cup, whip with fork and pour all at once over flour mixture. Mix with fork until flour is completely mixed. Press evenly and firmly with fingers to line bottom and side of pan. Very good and quick for fresh fruit filling such as rhubarb.

02 Feb: Pickled Spicey Beans

Pack raw, washed string beans in jar. For each pint add: 1/2 tsp. ground red pepper, 1-2 crushed garlic cloves, large head dill (carrots may be added). Bring equal parts vinegar and water plus 1 tbsp. canning salt per cup of liquid, to boil – add to jars – tighten lids. Process 10 minutes in hot water bath.

02 Feb: Taco Pie

Press rolls in a 9″ pie plate. Brown hamburger with chopped onion, drain. Add water and seasoning. Bring to a boil. Pour over crust. Next spread sour cream over hamburger, then sprinkle the cheese over sour cream. Bake at 350 degrees for 25 minutes. Crush Fritos or Doritos and put on top of pie. Bake 5 minutes more. Serve with shredded lettuce, chopped tomatoes and salsa.
